All you need are a few simple ingredients to get started.

Ingredients to make ice cream tacos
1 box (6 count) of Gluten Free Soy Free Frozen Waffles (like Kashi Gluten-Free Waffles)
1 pint of soy free Vanilla Ice-cream (like Hagen-Daz or 365 Whole Food Brand which is soy free)
¼ cup of Chocolate Syrup– make sure if you’re avoiding soy that the syrup is soy free also. Hershey’s does have a 5 ingredient syrup that is great!
2 tablespoons of Sprinkles
6 Maraschino Cherries

Instructions to make state fair tacos
Place the frozen waffles in a single layer and microwave for 15 seconds. They should be pliable.
Form each waffle into a taco shape and place them in a baking dish. A 9×9 baking dish would hold all six waffles pretty snugly.
Freeze the waffles for 30 minutes or until they hold their shape.
Fill each waffle taco with 1 large or 2 small scoops of ice-cream.
Drizzle with chocolate syrup and add a smattering of sprinkles.
Freeze the tacos for about an hour to allow them to harden.
Keep the tacos in the freezer until time to serve.
Let it sit on the counter for 5 minutes before serving.
Just before serving, add a cherry on top.
