These frittata muffins are light and fluffy and packed full of flavor. The Instant Pot Egg Frittata Muffins are something I like to keep available in our fridge. We sometimes change what we toss in them for a different flavor combination. Raising hungry boys with appetites like their daddy, I need options that have protein to help fuel my growing boys and to keep my husband full and energized while working hard to provide for the family. Not to mention I need a breakfast that is nutritious to help fuel me throughout the day while homeschooling, chores and keep my mind focused. 

When you make these egg frittatas, I am sure you will enjoy them as much as we do. Preparing a hearty breakfast is a cinch and cleaning up is effortless. Sometimes I’ll add in an English muffin to accompany these frittatas or serve fruit alongside them, which is my boys’ favorite combination. Adding in fruit, toast, English muffin or your favorite breakfast choice to accompany these egg muffins helps tide your family over until lunch. Whether you add in bacon, sausage, or go meatless and load up on veggies, these Instant Pot Egg Frittata Muffins will turn out delicious every single time. 

 

Now, for those who have been here a little while you may recognize these! I did a similar version in my oven a few years back! Well, these are so well-loved in my house that I just had to see if I could come up with a version for the Instant Pot! Mother’s Day is quickly approaching and while I do have a frittata recipe for the Air Fryer as well, I thought these muffins would be so wonderful for a brunch or tea! Also, just a quick note for us busy moms, these muffins do heat up well in the microwave later! I make a bunch and put them in the fridge to send out with my husband for breakfast at work and my teen or I can heat them up for breakfast in the mornings or mid-day snack. I hope you enjoy them!

Ingredients For Instant Pot Frittata Muffins

 
6 eggs
1/4 cup milk
1/2 tsp salt
1/2 pepper
3 slices turkey bacon sliced
1/2 small red bell pepper chopped
1/4 cup fresh spinach (torn into smaller pieces)
1/4 cup shredded cheddar cheese

Directions for Instant Pot Frittata Muffins

1) In a large bowl whisk together the eggs, milk, salt and pepper.


2) Grease 8 silicone cupcake liners. Layer the bottom of each cup with turkey bacon, bell pepper and spinach. Arrange the liners into an oven safe bowl or stacking steaming basket that fit in the Instant Pot.        

3) Carefully fill each cupcake liner about 3/4 of the way. Sprinkle the cheese on top of each frittata. Cover with foil, silicone lid or the stainless-steel lid for the steaming basket. I shared above where you could pick one up at.

4) Add 2 cups water to the Instant Pot insert. Place the bowl or steamer on the trivet and carefully lower the frittatas into the Instant Pot.


5) Close the lid and turn the pressure valve to sealing. Cook on high pressure using manual for 25 minutes. Let the pressure release naturally. Remove and let cook. Serve while still warm.
