My husband is a Rib Connoisseur! He loves BBQ ribs! If he hears about a restaurants having the best BBQ, he will put their reputation to the test and then tell the manager/owner his opinion of their BBQ. He says that if the ribs ain’t worth eating, then neither is the rest of the BBQ. Anyway, here is a story about his love for ribs….

My husband and I barely dated. We were young and in love. He was an Army Soldier and I was, according to him, a nasty civilian, but a beautiful nasty civilian. Where was I?

Oh yes, we were young and in love so we quickly eloped. We’re still going strong after a decade plus of marriage! Anyway, shortly after we married, he talked on and on about how much he loved his mom’s ribs. I refused to even try to make them because I didn’t know if I could ever compare! Who can compare to a beloved dish that your husband’s momma fixed, right?! There is nothing like a mother’s love and I love ribs, but they aren’t always the easiest to make. I questioned whether to attempt to please my husband’s taste for ribs.

Many years later, along comes the Instant Pot. Ribs can be a tricky recipe to master for the newcomer. Sure, we all know a good recipe, but often times the ribs lack any good flavor, especially when we make them for the first time. This Instant Pot recipe is NOT like that! It’s packed full of wonderful flavors!

If you love ribs but hate the hassle, this Instant Pot recipe is for you! Delicious and easy to make, this recipe will leave you and your guests drooling for more.

Ingredients

1 rack ribs
1 cup cola soda
½ cup bbq sauce
1 tbsp. Cajun seasoning

Directions:

Mix cola and ¼ cup bbq sauce in the bottom of the Instant Pot insert. Place the trivet at the bottom.


Next, rub cajun seasoning over the ribs.

 Place the ribs on top of the trivet. Lock the lid into place and turn the pressure valve to sealing.


Cook on high pressure for 30 minute using the manual setting.

When done cooking release the pressure using the quick release method. Place the ribs on a baking sheet and cover in the remaining bbq sauce.


Place the rib under the broiler for 5-10 for until the bbq sauce in the desired crispness. Let sit 10 minutes before cutting and serving.
