Easy Instant Pot Beef Lettuce Wraps (Low Carb)

I have the perfect low carb lunch or dinner option for you to try. These low carb Instant Pot beef lettuce wraps, part of my Instant Pot Beef Freezer Meal Series- are sure to hit the spot. You have seasoned lean ground beef, bok choy, peppers, carrots, ginger and soy that brings you one flavorful low carb dish. This recipe is will help keep you on track with your diet, but taste like a guilty pleasure. Put your beef mixture into a lettuce wrap and enjoy a healthy wrap. 

Maintaining a low carb diet, I crave a variety of tastes. When I can create quick and easy meals that offer a bold flavor factor, it helps keep me interested and maintain my lifestyle. These beef lettuce wraps are packed full of flavor. The crisp Romaine lettuce adds the crunch I need to throw these wraps over the top. I prefer using Romaine lettuce as it holds together nicely and makes the perfect cup to keep the meat from falling out. The boys and the husband all approve of these low carb lettuce wraps. You will find so many tasty elements that you wouldn’t think it was low carb.

What is so impressive about these Instant Pot lettuce wraps is you can even prep them ahead of time for the perfect freezer meal to stock your freezer with. It takes minutes to prep for the freezer and minutes to cook. I just made a handful of these for our freezer and made a couple for a friend who loves this recipe as well. I find this is a great starter recipe for anyone who is using the Instant Pot. Minimal steps, incredibly easy and doesn’t take long to cook. 

Savory Low Carb Instant Pot Beef Lettuce Wraps 

When you swap out the tortillas for lettuce, it makes this a perfect low carb meal option. You get the savory taste from the ground beef and seasonings with a hint of sweetness from the brown sugar. You can use any type of lettuce, but as I said above, I find Romaine helps hold together a lot easier.

Accessories To Make Cooking These Lettuce Wraps Easier 

Mandolin | I highly recommend investing in a mandolin for slicing the carrots. If you like making items that use matchstick carrots and other veggies like spring rolls you might get great use out of this kitchen gadget. Save time by getting the perfect sized carrot slices. 

Meat Chopper | I bought a meat chopper years ago and I have loved how much it dices up the ground beef when I’m cooking it. I have found it helps the meat go further as well because I get it to dice up real nice. This is a handy gadget I use whether I cook on the stove or Instant Pot. I own the Pampered Chef meat chopper and have had it for over ten years now and still chopping great!

Ingredients For Easy Instant Pot Beef Lettuce Wraps

Filling:
2 lbs. cooked ground beef (about 3 cups)
1/2 small onion chopped
2 closed minced garlic
1 yellow bell pepper diced
2 cups rinsed bok choy chopped
3 carrots peeled, and finely chopped (I used my mandolin to make matchsticks)
1/3 cup soy sauce or if you need soy free use this alternative. 
2 tsp sriracha
1 tsp ground ginger
2 tbsps. brown sugar

Prep:
1) In a freezer bag combine all the ingredients for the filling.


2) Close the bag and give it a good shake to mix up the sauce and seasonings.
3) Write the recipe name on the bag and add a label with the cooking instructions. Store in the freezer for up to 1 month until ready to cook.

Label:
1/4 cup water
Manual 3 minutes
Quick Release

Cooking Instructions For Easy Instant Pot Beef Lettuce Wraps

1) Dump the bag of filling into the Instant Pot insert. You might have to break it up a bit, but it should not freeze in a block.


2) Add the water and close the lid. Turn the pressure valve to sealing. Cook on high pressure using manual for 3 minutes. Then release the pressure using the quick release method.


3) Turn off the Instant Pot and mix up the meat filling. Let it cool while you wash and prep the lettuce for the wraps. I use romaine lettuce since it easily forms a taco shape.               


4) When the meat has cooled a bit add a couple spoonful of filling to the leaves of lettuce. Garnish with sriracha, sesame seeds, green onions, and red chili flakes if desired.
