Ingredients For Easy Instant Pot Beef Lettuce Wraps
2 lbs. cooked ground beef (about 3 cups)
1/2 small onion chopped
2 closed minced garlic
1 yellow bell pepper diced
2 cups rinsed bok choy chopped
3 carrots peeled, and finely chopped (I used my mandolin to make matchsticks)
1/3 cup soy sauce or if you need soy free, you can make your own “faux” soy sauce or use this soy free alternative.
2 tsp sriracha
1 tsp ground ginger
2 tbsps. brown sugar

1) In a freezer bag combine all the ingredients for the filling.
2) Close the bag and give it a good shake to mix up the sauce and seasonings.
3) Write the recipe name on the bag and add a label with the cooking instructions. Store in the freezer for up to 1 month until ready to cook.

Cooking Instructions For Easy Instant Pot Beef Lettuce Wraps
1) Dump the bag of filling into the Instant Pot insert. You might have to break it up a bit, but it should not freeze in a block.
2) Add the water and close the lid. Turn the pressure valve to sealing. Cook on high pressure using manual for 3 minutes. Then release the pressure using the quick release method.
3) Turn off the Instant Pot and mix up the meat filling. Let it cool while you wash and prep the lettuce for the wraps. I use romaine lettuce since it easily forms a taco shape.
4) When the meat has cooled a bit add a couple spoonful of filling to the leaves of lettuce. Garnish with sriracha, sesame seeds, green onions, and red chili flakes if desired.
