Hearty Instant Pot Lasagna Soup {Instant Pot Beef Recipe Series Part 3}

Check out my Hearty Instant Pot lasagna soup that will be the highlight of the evening. You have ground beef, flavorful tomato-based broth, Italian flavors, cheese and pasta for that perfect Italian style lasagna soup. This recipe is a one pot dish that is so easy to make and perfect for dipping breadsticks or garlic bread! P

lus it makes for a great freezer meal to reheat later or to warm up on a cold winter day. You get that cozy and comforting flavor of lasagna without all the work of layering and baking it. This soup will become an instant favorite after your first bite.

Instant Pot lasagna soup is a fool-proof recipe that is great for beginners or advanced users of the Instant Pot. With minimal steps required, it is easy to make and is an excellent starter recipe for the most novice or timid users of the Instant Pot. This is a crowd-worthy soup that everyone will love. If you like to meal prep, this is one to prep ahead of time and toss in your freezer for easy meals throughout the week. 

Quick and Flavorful Instant Pot Lasagna Soup 

Lasagna has always been one of my favorite dishes. The elements of layers of ground beef, noodles, cheese, topped with tomato sauce and ooey gooey golden brown cheese is absolutely enticing. Unfortunately, it makes a mess in the kitchen and is quite a long process to make. Worth it in the end, but a lot of work nonetheless. 

As a mom to boys, I am reminded real life doesn’t always allow you to add those layers and make lasagna from scratch. So I created a lasagna soup that gives you all those tasty layers of lasagna, but in a one-pot way, so this busy mom can still enjoy those delicious flavors.

Freezer Bag Ingredients for Hearty Instant Pot Beef Lasagna Soup

2 lbs. cooked ground beef (about 3 cups)
1 diced onion
3 cloves minced garlic
6 tsp chicken bullion
2 tbsp tomato paste
1 tsp granulated sugar
1 tbsp Italian seasoning
1/2 tbsp dried basil
1 whole bay leaf
1 package whole wheat lasagna noodles broken into pieces

Cooking Ingredients:
1 – 28 oz can crushed tomatoes
6 cups water

Toppings:
Mozzarella cheese
parmesan cheese
ricotta cheese
green onions

Prep:
1) Add all the freezer bag ingredients to a freezer bag except the lasagna noodles. Close the bag and mix up the ingredients. This will ensure the tomato paste doesn’t freeze in a solid lump.


2) Open the bag and add the broken lasagna noodles.


3) Seal the bag and write the recipe name on the freezer bag. Add the cooking directions to the label.

4) Store in the freezer for up to 1 month until ready to cook.

Label:
1 can crushed tomatoes
6 cups water
Manual 6 minutes
Natural Pressure Release

Cooking Instructions:
1) Dump the contents of the bag in the Instant Pot insert.


2) Add the crushed tomatoes and water. Give it a quick stir to make sure all the noodles are covered.


3) Close the lid and turn the pressure valve to sealing. Cooking the lasagna soup on high pressure using the manual setting for 6 minutes. Let the pressure naturally release.


4) Remove the lid, turn off the Instant Pot and let it cool for about 5 minutes.
5) Serve the soup in a bowl and top with mozzarella, parmesan, and ricotta cheese.
