I am digging into little known “National Holidays” this year and, seriously, who knew there were so many? Who also knew that in addition to National Donut Day, National Cheese Pizza Day and National Apple Cider Day, there is also a National Pickle day?
Where did the word pickle originate? Pickle comes from the Dutch word pekel which means brine. Here in the United States, we know this more commonly as a pickled cucumber. Pickles have been a popular food dating back to 2030 B.C. At that time, cucumbers were imported from India to the Tigris Valley where they were first preserved and eaten as pickles.
I have a funny story to tell. I love to can! A few years ago, I was canning pickles. Well, my oldest really got into eating pickles during this time. Somehow we got into a discussion and he was telling me how farmers grew pickles. When I told him pickles are actually cucumbers, he refused to believe it! Well, sometimes seeing is believing so I took him to the store and showed him the ingredients on a jar of pickles. He still couldn’t believe it and accused me of contacting the company and adding “cucumber” to the ingredients! I think now that he is a teen, he actually believes me. HA!
Anyway, I personally love pickles because they are low-calorie! However, did you know that pickles are a great source of Vitamin K? Delicious and healthy! I urge you to check out the many fantastic pickle recipes below and eat up!
