Last week I posted a roundup of Air Fryer Recipes to kick off my latest kitchen gadget obsession. Between the Air Fryer and the Instant Pot, I believe I could probably get rid of my stove! 

One of my favorite vegetables is the zucchini. If Bubba Gump was a zucchini company instead of a shrimp company, could you imagine all the different ways a person could make zucchini?!

My mouth is watering, y’all!

I love them in a salad, as a crunchy snack, grilled, sautéed, baked, canned, in a relish, and also fried.

Frying zucchini in the air fryer just got easier and tastier! This fantastic gadget locks in the natural flavors that seem to get lost while cooking more traditional ways. 

I like to consider myself a fried zucchini connoisseur.

I have been eating it my entire life, but after eating it out of the air fryer, I feel like I have missed out on so much taste and flavor.

So let me share with you how I fix them….

Air Fryer Zucchini Parmesan Chips

Serves: 4

Ingredients                 

  • 2 medium sized Zucchinis, thinly sliced
  • 1 Egg, lightly beaten
  • ½ cup Italian-seasoned Breadcrumbs
  • ½ cup grated Parmesan Cheese
  • ½ teaspoon of Smoked Paprika (optional)
  • Cooking spray or mist
  • Salt and freshly cracked pepper, to taste

Instructions

  1. Slice the zucchinis as thinly as possible with a knife or a mandolin slicer. Pat dry with a paper towel to get rid of excess moisture.                
  2. Beat the egg with a tiny splash of water, a pinch of salt and pepper, in a shallow bowl. In another shallow bowl, combine the breadcrumbs, grated cheese and smoked paprika.                                   
  3. Dip a zucchini slice in the egg, and then in the cheese-breadcrumbs mix. Press to coat. Place the crumb coated slices a wire rack. Repeat with all the slices
  4. Spray the crumb coated zucchini slices with cooking spray or mist.          
  5. Place the slices in the basket of the air fryer in a single layer, making sure that they don’t overlap.                     
  6. Air fry in batches at 350º F for 8 minutes.
  7. Sprinkle with salt (if needed) and pepper to taste and server hot with ketchup or salsa.                       

Note

  1. Parmesan is a salty cheese, taste one chip to make sure you need more salt.
  2. Keeping the crumb-coated slices on a wire rack, will let any lose crumbs fall off, and not clutter up the Air Fryer Basket.
  3. The time for the chips to be done, will depend on the thickness of the zucchini slices. I sliced mine very thinly and they were done in 8 minutes. Thicker slices will need more time to crisp up.
