Mexican inspired dishes are a staple across this country. You would be hard-pressed to find a small town without a Mexican restaurant within a 10 mile radius. Not only that, many families will prepare a Mexican inspired meal that may include burritos, tacos, enchiladas, or one of my husband’s favorites – huevos rancheros (rancher’s eggs). Our love for Mexican food grew when we were stationed in El Paso, Texas. While living on the border, we were introduced to authentic Mexican cuisine. Although we enjoy visiting a Mexican restaurant in our hometown, the taste and quality of these dishes does not compare to that found on the border.

The other day I shared a recipe for Instant Pot Mexican Street Corn Pasta Salad. Our palates have a fondness for hispanic inspired foods and I have shared several recipes here and on my sister site. Here are a few of them: 

 

Cinco de Mayo is around the corner. If you’re looking for a wonderful recipe to add to your menu, THIS IS IT! You must try Air Fryer Crustless Mini Taco Quiche. It is similar to my frittata and my Instant Pot frittata but with a Mexican flare, of course. This recipe is also low carb. It is packed full of protein and flavor and you cannot go wrong! (you may also love my egg muffins!)

However, I feel I must warn you. The night this recipe was first made, there was a fight between a father and a son over about who would eat the last quiche. It is seriously that good!In the end, Dad decided to be the bigger person and split it. Respect was earned from a teenaged boy to his father.  

Tip: I chose to use my cast iron skillet to start this recipe and brown the meat. You can use your Instant Pot if you have one. If you decide to use the Instant Pot, just use the saute feature.

 

Air Fryer Crust-less Mini Taco Quiche

 

Ingredients

  • 1 lb. of ground Beef
  • 1 small red Onion, diced
  • 1 medium-sized Red Bell Pepper, diced
  • 1 medium-sized Green Bell Pepper, diced
  • 2 tablespoons of Taco Seasoning
  • 4 large Eggs
  • ¼ cup of Salsa
  • ¼ cup of Half and Half (use heavy cream for a more creamier quiche)
  • 1 cup of Shredded Mexican Blend Cheese
  • Salt and pepper to taste
  • Sour Cream and Pico de Gallo and garnish
  • Mini Pie Pans

Instructions

  1. In a cast iron or nonstick pan, over medium high heat, add the beef. Season with salt and pepper and brown the meat well, breaking the lumps with the spatula.                   
  2. Add the onions, both peppers and taco seasoning. Mix well and cook for another 3 to 4 minutes till the vegetables are soft. Keep aside   NOTE: If your beef has a lot of grease you will want to drain it.                        
  3. In a large bowl, combine the eggs, half and half, salsa and the cheese. Whisk it well.    
  4. Lightly grease 4 mini pie pans. Add about ½ heaped cup of the beef mixture into each pie pan.                                              
  5. Top with ¼ heaped cup of the egg-cheese mixture.
  6. Air fry at 350 F for 12 minutes.                        
  7. Serve hot with a dollop of sour cream and a sprinkle of pico de gallo.
