I seemed to have got ahead of myself. Before I could eat the corn, it had to be corn season back home. Corn was picked and brought back to the house in bushels. My grandma would call me down and I’d spend the rest of the day shucking corn.
I still shuck corn to this day and it’s a skill I have passed down to my kids. Although I don’t have my own corn fields, I still get my corn from a local farmer or from the farmer’s market.
This simple recipe takes two of my favorite childhood memories and combines them – corn on the cob and carnival food or state fair food. Good thing it’s about to be corn season because you’re going to want to make this recipe all the time, just like my Instant Pot Mexican Street Corn Pasta Salad!

Do you need to wrap the corn in aluminum foil before placing in the air fryer?
Nope! (Did I mention how simple this recipe is?!) All you need to do is shuck the corn, get off all those fibers so they don’t stick in your teeth and drop them in the air fryer.
Won’t the toppings fall off the Air Fryer Corn on the Cob?
Probably, but that’s okay. This recipe isn’t meant to be un-messy. If you happen to have a little bit of the spices and toppings fall off, just scoop them back up and save them for round two because I guarantee you won’t be able to stop at just one! The good news is, you add the toppings after removing the corn from the Air Fryer, so the mess won’t be in there. 🙂
Can you make this Air Fryer Corn spicy?
This recipe calls for a little bit of spice, but you can certainly doctor up your own dish to fit your heat level. The great part about this air fryer recipe is that you add your own toppings at the end. If you want to make yours with extra heat, you can absolutely do so and without affecting the rest of the corn.
How do you reheat the leftover corn?
Reheating in the microwave is the quickest way. Just keep in mind that anytime that you reheat corn on the cob, there’s a chance that the kernels will be a little deflated and not “pop” back up. While this doesn’t affect the taste or flavor, it may alter the look just a bit.
Can you freeze this air fryer corn recipe?
Putting it in a freezer safe container or bag for later is always an option, but you’ll want to cut the kernels off the cob first. Then, when you decide to unthaw and eat, you can season up those kernels with the same ingredients as listed below. Ingredients to make State Fair Air Fryer Mexican Street Corn
4 Corns on the Cob
2 tablespoon of grated Cotija Cheese
½ teaspoon of Chili Powder (reserve this amount for garnish) Also tip: We use low sodium chili powder.
2 tablespoon of finely chopped Cilantro (for garnish)
¼ cup Soy free Mayonnaise ( We prefer Sir Kensington)
¼ cup of Sour Cream
2 teaspoons of Chili Powder
½ teaspoon of Garlic Powder
Juice of 1 small Lime

Place the shucked corn on the cob in the air fryer basket.
Air fry at 400 F for 10 minutes. Flip and air fry again for 5 minutes.
While the corn is in the air fryer, make the sauce. In a bowl, combine the mayonnaise, sour cream, chili powder, garlic powder, and lime juice. Whisk it till smooth.
Once the corns are air fried, drizzle each cob generously with the prepared sauce. The best way to do that is to fill up a squeeze bottle with the sauce and drizzle it.
Then top each cob with a generous pinch of grated Cotija cheese, chili powder, and chopped cilantro.
